Bondi-born, pioneers of ‘design your own noodles’, Thai in a Box approached Peter Zafis and the Total Fitouts Surry Hills team to create an ‘outside the box’ renovation & extension hospitality fitout in Merrylands NSW.
Adam, the owner of the quirky eatery, famous for its cooked-to-order Asian fusion boxes, wanted to extend and refresh his existing hospitality space. His vision – to showcase the open-plan kitchen, extend the seating plan and create an indelible dining experience. Lighting, wall art, neon signage, murals, feature tiles and custom joinery were just a few of the elements required to deliver the client’s vision.
The fitout team delivered custom joinery crafting a stunning central ‘feature’ oak servery counter, which acts as a window between the chefs in the commercial kitchen and customers. The detailed carpentry was surrounded by a printed leaf mural, selected by the Total Fitouts in-house interior designers, adding texture and a verdant graphic element. Large plants were chosen throughout to continue the connection to earth and nature.
Front of house (FOH), oversized charcoal concrete tiles were laid throughout to cohesively connect the old and new spaces. Terracotta handmade tiles were skilfully installed back to front to increase the textural effect. Led strip lighting and mood-shifting pendants were hard-wired to define eating spaces and accentuate the rustic terracotta tiles.

Peter’s talented team delivered custom-built hardwood seating booths finished with teal green leather upholstery and black wooden accents. Complimentary hardwood tables and wicker downlights were selected to complete the intimate dining spaces. Bespoke joinery continues around the perimeter of the additional dining space. Brown leather, wicker pendants, terracotta hues and wooden chairs complete the stylish look.
Peter said, ‘The wow factor with this quirky hospitality fit out was the installation of striking graffiti mural wall artworks and on-trend kitschy neon signage. The owner’s sense of humour is highlighted with the ‘Tastiest box in town’ sign which always captures customers’ attention.
Our designers delivered the brief and created an indelible dining experience.” Peter and the Total Fitouts Surry Hills team expertly managed the construct and build project, delivering bespoke finishes, custom timber joinery, mood lighting and high-end finishes. The result is another Instagramable, memorable hospitality fitout for Peter and his local talented team.
