Masala Kitchen Dee Why, one of Lucky Rajput and Ashveen Chhabra’s re-imagined eateries, challenges the whole concept and perception of Indian restaurants. The creative pair wanted to create another exciting and intoxicating hospitality fitout with a fresh take on traditional Indian dining, don’t forget the gin twist.
The eye-popping hospitality fitout, located in Dee Why, NSW, was creatively brought to life by Peter Zafis and the Total Fitouts Surry Hills team.
The neon, arty Indian eatery and gin bar, famous for its comprehensive gin bar which is tailored to complement the menu, was previously a vacant tenancy. The owners, who also own multiple Masala Kitchens across Sydney, wanted to transform the blank canvas into an eye-popping colourful and memorable dining experience.
They desired a colourful dining and bar experience for their customers to relax, unwind and enjoy tasty Indian cuisine and complementary gins from around the world.
Total Fitouts worked with designer Brad Ward to fit out multiple spaces including a full commercial kitchen, internal and external seating areas, a cool room, wash-up areas, a coffee station and a bar.
Peter and the fitout team were tasked with interpreting the client’s design and transforming the empty shell into a memorable, eye-catching, cool hospitality fitout. Behind the scenes, a full commercial kitchen was installed featuring ample work benches, fridges, shelving, storage, a cool room and gas cooktops.

Front of house (FOH), a variety of different seating options and areas were crafted using banquette seating and complementary/contrasting chairs and tables.
Commercial Interior Designer Kellie Quach says, “Designer Brad Ward drew influences for this restaurant/bar fitout from the surrounding Dee Why waterfront community. He incorporated woven rattan pendant lamps and travertine mosaics. Warm, light colours, curved wooden ceiling panels, and fans added a relaxed, beachy, vibe.”
Wow factor and ambience were achieved with custom neon signage, bespoke shelving above the bar and led strip lighting. Indoor planters and wall graffiti art murals were key style additions and helped pull the concept together.
Peter, Kellie and the Total Fitouts Surry Hills team expertly managed the complete construct and build project, delivering bespoke finishes, custom timber joinery and timber finishes. The result is another neon, eye-popping, vibey, tasty hospitality fitout.
